Dokle

This is one hellava healthy and very tasty dish we call dokle (not to be confused with Gujju dhokla). It is a steamed dish with little oil, but yes does require some amount of preparation time!

Ingredients:
For the dough:
Wheat flour
Salt: A pinch (as per requirement)
Chilli powder: A teaspoon
Coriander powder (Dhaniya): Half a teaspoon
Turmeric: A pinch
Oil: A spoon
Water for kneading

For the stuffing:
Methi: Leaves of one bunch
Garlic: 10 cloves (actually the more the merrier)
Salt: A pinch (as per requirement)
Chilli powder: A teaspoon
Coriander powder (Dhaniya): Half a teaspoon
Turmeric: A pinch
Oil: 3 teaspoons


Method:

Dough: Mix all the ingredients into dough and keep aside.
The amount of oil added can be varied

Stuffing: Heat the oil in a kadhai.
Add the garlic cloves and fry it brown
Add the chili powder, coriander powder, turmeric and fry
Add the Methi leaves and salt and cook till the water evaporates.

To cook:

Roll out a small ball of dough into a thin flap and place it on an idli plate as shown



Place some of the methi stuffing on the wheat flap.

Now roll out another flap and place this on the stuffing, like a sandwich.



Repeat this procedure with the rest of the dough and stuffing.


Steam it for 15 minutes in a cooker.
